Banana Oatmeal Muffins

These muffins are made with whole grains and fresh fruit. They are quick and easy and make a good breakfast or tasty snack! Yogurt is also used to replace the butter and cut down on fat. Ingredients:1 cup Wheat-flour1 Cup Oats 3-4 bananas, mashed ½ cup yogurt ½ cup sugar2 eggs½ tsp salt1 tsp vanilla1 tsp baking soda½ cup nuts, chopped, optional
Directions:Pre-heat oven to 300°F.  Combine flour, oats, sugar, salt, and baking soda. Using a mixer, add in yogurt, eggs, and vanilla. Stir in mashed bananas until it is well-combined. Add nuts, if using. Spoon batter into muffin tin and bake for 30-35 minutes or until done.
